A low-carb version of our favorite snack dip.
Artichokes are loaded with nutrients, and they are so tasty and filling! We love them on pizza, but we love them even more in a dip! We made a creamy artichoke dip that you can eat with leftover chicken, salmon, or any meat. You can also use this dip as a sauce for your favorite zoodles, or just eat it with a spoon when you're craving something delicious. It's done in 20 minutes, and has only 7g net carbs per serving.

Heat the olive oil in a deep non-stick pan and sauté the onions with the chopped artichoke hearts for 2-3 minutes.
Add the spinach and minced garlic and allow the spinach to wilt down for a couple of minutes. Season with salt and pepper, and pour in the heavy cream.
Stir well to incorporate heavy cream into the mix and gradually add Gouda cheese and cream cheese, mixing to melt and incorporate each batch of cheese into the mixture.
Serve warm with the cubed grilled chicken.
