When I recall my earliest food memories, I am suddenly taken back to being a little girl in a cozy kitchen imbued with delicious smells. The smell of coffee, in particular, is the most evocative for me when it comes to food. I couldn’t wait to grow up so I would be allowed to have my own massive cup of coffee served with a delicious slice of fruit cake; to me, that was the essence of adulthood.

A couple of decades later, science-backed facts proved me right. Coffee does make people happy. It affects many of the chemical messengers that help control your mood, so we’re not imagining things because that latte does improve our sense of wellbeing. It’s one of the foods that makes you happy!

 2 cups coffee, strong and fresh brewed
 1 cup coconut milk
 ¼ cup pumpkin puree
 2 tsp pumpkin spice blend
 1 tsp vanilla extract
  cup heavy whipping cream
 2 tsp butter
 ½ tsp stevia powder

Brew 2 cups of coffee.

While coffee brews, heat the milk, pumpkin puree, butter, and spices in a deep pan for 2 minutes over medium heat. Add coffee to the mixture and stir well. Remove from heat, add about 1/3 of the cream and 1/2 of the stevia to each cup of coffee, and whisk until smooth.
